A Simple Apple Galette



First things first, galettes are my cheat dessert. I cheat by buying pre-made pie dough. And I know many people would think that is insane and that a homemade pie crust tastes a million times better (which they do), but sometimes it is just easier to buy things pre-made. Now that that is off my chest, we can continue! 



I like to make galettes when I have an abundance of fruit. The boyfriend's mom brought us a bag of freshly picked apples the other week. They were so pretty and when I sliced them, it was like they were stained in pink watercolor. We had guests coming over for dinner one night so I thought it would be a perfect time to use up those apples. Making a simple galette really lets the fruit stand out. Plus if you are having guests or if you're too busy to make a really elaborate dessert, a galette is quick and simple but delicious and satisfying. 

I wish I could give you exact measurements for a galette, but everything really is just to taste. The measurements I've written down are extremely flexible so figure out what tastes best to you!



Apple Galette
Makes 1 galette, makes 8 servings, or 4 servings for those who want seconds!

1 pre-made pie dough (bought or homemade)
3 - 4 medium to large apples, washed, peeled, cored and sliced into thin wedges
2 tbsp packed brown sugar
1 tbsp flour
1/2 tsp cinnamon
a pinch of nutmeg
a wedge of lemon
1 egg, lightly beaten
raw sugar 

To start, place your thinly sliced apple wedges in a medium bowl. Add the brown sugar, flour, cinnamon and nutmeg to the bowl and mix until the apple wedges are coated. Add a squeeze of lemon juice to the apples and give it another stir. Let this apple mixture sit for 15 to 30 minutes to let everything macerate.

Preheat your oven to 350F or 175C and line a baking sheet with parchment paper. Unroll the pre-made pie dough onto the lined baking sheet. Starting from about 2 to 3 inches in from the edge of the pie dough, place your apple wedges in a circle. Continue layering the apples until you run out and reach the center. Fold the sides up (some of the apple slices on the outer layers will be covered), brush on some of the lightly beaten egg, sprinkle some raw sugar onto the dough. 

Place the galette in the oven for about 35-45 minutes. Check the galette at the 30 minute mark and keep an eye on it after that. The galette is finished when the crust is nice and golden. Remove from the oven and let it cool for a few minutes before cutting and serving. My favorite way to eat this is with some vanilla bean ice cream or with vanilla whipped cream!



Galettes are extremely flexible so try using other fruits that you have at home as well! Nectarines, plums, berries, yum! I'm loving the apples right now and when it is mixed with some cinnamon and nutmeg, it tastes just like fall.
