Chocolate Peanut Butter Snack Bites



This is rare. I rarely post recipes like this. And by this I mean I rarely post recipes that are actually pretty healthy for you. In general, the boyfriend and I eat and live pretty healthy. And when I bake, we usually eat only a third of what the recipe makes. The rest is shared when we have friends over, I freeze some things like cookie dough, breads and muffins for later, or I send them with the boyfriend to work. But these chocolate peanut butter snack bites, you can totally save them all for yourself. I mean, you probably won't even be able to eat so many in one sitting because they are really filling!



(No-Bake) Chocolate Peanut Butter Snack Bites (slightly adapted from How Sweet It Is)
Makes about 20 bites, depending on the size you roll 'em

1 cup old fashioned oats
1/4 cup ground flaxseed
1/4 cup sliced almonds, chopped some more
11/2 tbsp dark cocoa powder
a pinch of cinnamon
a pinch of salt
1/4 cup + 2 tbsp natural creamy peanut butter, melted and slightly cooled
1/4 cup + 1 tbsp honey
1/4 tsp vanilla extract
ground almonds (or peanuts) to roll the balls in

Combine oats, ground flaxseed, almonds, cocoa powder, cinnamon and salt in a large bowl and stir.

Melt peanut butter and allow it to cool slightly. Then stir the honey and the vanilla into the peanut butter until it is combined. Once peanut butter has cooled a bit, pour it over the oats mixture and mix well with a wooden spoon.

Roll dough into balls, whatever size you would like them, and then roll in ground almonds or ground peanuts tossed with a pinch of cocoa powder. These can be eaten at room temperature, but we store ours and eat ours straight from the fridge.

Also, these are perfect for people who are on paleo, gluten free, refined sugar free, etc. diets! Snack away my friends!
